No-Bake Energy Oat Bars

These energy bars are a delicious go-to snack that are easy to make, with no baking required. Simple, wholesome ingredients with a great flavor that everyone will love!

I created these No-Bake Energy Oat Bars for my entire family to enjoy. They require very little work, just a food processor and a few ingredients that are easy to store in a pantry. The base is simply made of oats, dates, and peanut butter.

You can choose to leave the chocolate off a section to eliminate added sugar and reduce calories. My toddler, who has yet to learn the joy of chocolate, gets the basic bars.

The melted chocolate spread on top makes these snack bars quite an indulgence – and I never skip it! Chocolate chips can be melted in the microwave or in a double boiler.

Once refrigerated, these bars hold up their shape quite well. Perfect for lunch boxes or a tea-time dessert!

As part of my Capsule Kitchen project, I develop recipes with wholesome ingredients that are widely available and affordable. Similar to the capsule wardrobe concept – each item serves multiple purposes. For example, peanut butter is the base for peanut sauces and it is a great option for a protein-rich, filling snack. Dates are a natural sweetener used in many recipes instead of sugar and they are packed with potassium, fiber, and antioxidants. Lastly, oats occupy a large space in our pantry as the daily breakfast food of choice and we often grind them up for a quick gluten-free flour.

No-Bake Energy Oat Bars

Basic Bars:

  • 1 cup rolled oats
  • 10 Medjool dates, pitted
  • ½ cup peanut butter

Optional Toppings:

  • 1 cup vegan chocolate chips
  • 1 tbsp hemp seeds


  1. Combine oats, dates, and peanut butter in a food processor. Process until all ingredients are well mixed, scraping down the sides as necessary.
  2. Using a dough roller, spread out the mixture on a non-stick surface such as a silicone pad, parchment paper, or wax paper. Press firmly as you roll, this will help the bars to hold their shape. Form a square approximately 9” x 9”.
  3. If adding chocolate, set up a double boiler to melt the chocolate chips or microwave them for 30 seconds at a time, stirring between each interval. Then pour on to the rolled mixture and spread it equally. Sprinkle the hemp seeds on top of the mixture.
  4. Transfer to the refrigerator to allow everything to set, for around 15 minutes. Remove and cut into approximately 18 bars. These can be stored in a sealed container in the refrigerator for up to a week.
